Shredded chicken glazed in a sticky honey barbeque sauce with just a hint of spicy. This super easy to make Honey BBQ Shredded Chicken is perfect in salads, tacos, nachos, and so many other dishes.
I’ve been living on this honey BBQ shredded chicken for a couple days now.
You know how there’s always that one versatile recipe that you can make and use in practically everything?
Yup. This is one of them.
It’s summer, and barbeque is the ultimate choice for flavors.
I mean, summer means hot days, outdoors, and food on the grill.
But for those of us who don’t have a grill, or it’s too much of a hassle to take out the grill, this easy honey BBQ shredded chicken is just as good.
You’ll want to add this chicken to all your dishes.
Trust me.
In a large Ziploc bag, add honey, your favorite barbeque sauce, and just a little bit of crushed red peppers. Gently shake to combine the ingredients to create the marinade.
I used honey barbeque sauce for this recipe and added more honey so that you can actually taste the sweetness of the honey. I also added crushed red peppers for that hint of heat. Sorry, I couldn’t resist. If you can’t eat slightly spicy foods, you can definitely leave it out.
Add about a pound of chicken breast into the Ziploc bag and make sure to coat the chicken with the honey BBQ sauce.
All of this just takes 5 minutes of hands on preparation.
The rest? Just waiting.
Refrigerate the marinated chicken for about 2 hours to allow the flavors to develop.
I like to do this first thing and then do other things while the chicken marinades.
After 2 hours, take the chicken out.
In a medium sized skillet, add olive oil to lightly cover the bottom of the skillet over high heat.
Once the olive oil has warmed, lower the heat to medium, then add the marinated chicken to skillet and allow the heat to sear and brown the chicken. This will take a minute or two.
Flip the chicken to the other side, and lower the heat to low. Pour the rest of the marinade over the chicken. You want the heat to be low so that the chicken and barbeque sauce doesn’t become burnt.
FYI – I accidentally forgot to lower the heat, and part of my barbeque sauce stuck to the bottom of my skillet. If that does happen, wash the skillet as best as you can and then sprinkle baking soda on top. Wait for 15 minutes and try to wash it again. Just keep repeating the process until all burnt food comes off. I swear, this works. =)
Now, back to the recipe.
Cover the skillet with a tight fitting lid. Allow the chicken to cook for about 10 minutes without peeking.
After 10 minutes, turn off the heat, but do not remove the lid. Leave the lid on for another 10 minutes.
Once the 10 minutes are up, remove the lid, the chicken is done.
Allow the chicken to cool for a few minutes before using two forks to shred the chicken.
Pour the rest of the sauce over the chicken and mix until the sauce coats all the chicken.
Serve the chicken warm. Or add it to your favorite dish.
