Honey BBQ Shredded Chicken

Ingredients
  • ½ cup favorite BBQ sauce
  • ¼ cup honey
  • 1 teaspoon crushed red peppers
  • 1 pound chicken breast
Directions:
  1. In a large Ziploc bag, add honey, your favorite barbeque sauce, and just a little bit of crushed red peppers. Gently shake to combine the ingredients to create the marinade.
  2. Add about a pound of chicken breast into the Ziploc bag and make sure to coat the chicken with the honey BBQ sauce.
  3. Refrigerate the marinated chicken for about 2 hours to allow the flavors to develop.
  4. After 2 hours, take the chicken out.
  5. In a medium sized skillet, add olive oil to lightly cover the bottom of the skillet over high heat.
  6. Once the olive oil has warmed, lower the heat to medium, then add the marinated chicken to skillet and allow the heat to sear and brown the chicken. This will take a minute or two.
  7. Flip the chicken to the other side, and lower the heat to low. Pour the rest of the marinade over the chicken. You want the heat to be low so that the chicken and barbeque sauce doesn’t become burnt.
  8. Cover the skillet with a tight fitting lid. Allow the chicken to cook for about 10 minutes without peeking.
  9. After 10 minutes, turn off the heat, but do not remove the lid. Leave the lid on for another 10 minutes.
  10. Once the 10 minutes are up, remove the lid, the chicken is done.
  11. Allow the chicken to cool for a few minutes before using two forks to shred the chicken.
  12. Pour the rest of the sauce over the chicken and mix until the sauce coats all the chicken.
  13. Serve the chicken warm. Or add it to your favorite dish.
