Chicken breasts marinated in a spicy honey chipotle sauce. This honey chipotle shredded chicken tastes amazing on its own or added to your salads and sandwiches.
Oh, I think I have the perfect recipe to share with you guys today!
I’m always looking for recipes that I can use for other dishes too. It saves so much time when you can use one dish and pair it with so many others. And this honey chipotle shredded chicken does just that!
While it’s super easy to make and prepare, it does require a little bit of planning ahead because you have to allow the chicken to marinade and the flavor to develop. But trust me, the wait is sooo worth it! You can quickly put it together the night before or even toss everything together in the morning before work or school. It’s seriously easy! Just 5-7 minutes of your time!
Once you try this honey chipotle chicken, you’ll want to make it ahead so that you can add to your salads, to your sandwiches, to your tacos, and pretty much whatever you like. I like to keep the leftover chicken in the fridge so that if I need to whip up something quick, I can just add the chicken to some of my dishes.
This chicken has the smoky taste of the chipotle, spiciness from the chipotle peppers and chili powder, and a hint of sweetness from the honey.

And you know how I’ve mentioned before that chicken is ridiculously un-photogenic? Well, I think I finally figured out to do it. Shred them to pieces. lol
Place the honey, chipotle peppers, adobo sauce, chili powder, and salt into a large Ziploc bag. Shake the bag to mix all the ingredients.
Now, add the chicken breasts into the bag and shake to completely coat the chicken with the chipotle sauce.
Let the chicken marinate for about 2-6 hours. You can even allow the chicken to marinade overnight. You want the chicken to marinate so that the flavors can develop.
Once the chicken is marinated, add olive oil to a medium sized skillet. Allow the olive oil to heat for about a minute before adding the chicken breasts.
Cook the chicken breasts for a minute or two over medium to high heat until the side faced down turns golden brown.
Flip the chicken to the other side and cook for about another minute or two until the chicken has browned. Spoon the rest of the marinade over the chicken. Cover the skillet with a lid and turn the heat down to low. Cook the chicken for about 10 minutes.
After 10 minutes, turn off the heat and let the chicken sit in the skillet with the lid on for an additional 10 minutes. Do not remove the lid to check on the chicken. Even though you turned off the heat, the chicken will continue to cook from the heat trapped under the lid so you want to make sure that you don’t remove the lid from the skillet.
After 10 minutes, remove the lid and check the temperature of the chicken.
If the chicken is undercooked, cook the chicken for anadditional 5 minutes over medium heat. Turn the heat off and cover the skillet for another 5 minutes.
Once the chicken is cooked through, remove the chicken from the skillet onto a plate. Use two forks to shred the chicken. Pour the chipotle sauce from the skillet onto the chicken and mix until all the chicken is well coated.
This will make about 4 cups of shredded chicken.
Serve the chicken in sandwiches, in tacos, in salads, or however you wish.

Hi Brenda! You can find chipotle peppers in adobo sauce at any supermarket with a Mexican/Hispanic section. It comes in a small can. I got mine in that section at Safeway. Hope that helps!
