Slightly garlicky avocado toast topped with a runny sunny side egg and ham. This avocado toast with sunny side egg and ham is perfect for a quick breakfast or snack.
It has been so cold lately. And super windy. And rainy. But I suppose I can’t complain. Much. After all, we need the rain to offset the years of drought in California.
But, that doesn’t mean I like being outside while it rains. Or getting the bottom of my scrub pants soaked because of all the puddles. Or having my umbrella flip on me. Life, right?
I really rather be home enjoying this version of avocado toast.
There’s something about avocado toast that’s so delicious, even in its simplicity. Or maybe it’s because it’s simple that you can enjoy the flavors more.
You can customize your avocado toast any way you want. Season it with salt and pepper. Maybe add a pinch of garlic powder for a garlicky flavor.
But to make this into a full breakfast, I decided to add a sunny side up egg and a slice of ham.
Simple, but absolutely delicious.
I love the savory taste of ham, the creaminess of the mashed avocado, and the runniness of the yolk of the egg. But not everyone likes sunny side up eggs, so you can always make your eggs the way you like them. Scrambled, fried, over easy, over medium, poached, soft boiled, hard boiled. Go ahead. Make this avocado toast yours.

First, slice the avocado in half and remove the pit. Slice the avocado and place them in a small bowl with the skin removed. Mash the avocado until the texture is to your liking. You can keep them sliced too. I like mine a little bit more mashed. Sprinkle salt and pepper and garlic powder to taste and mix until the seasoning is evenly distributed. Set the avocado aside for now.
Bake or reheat the ham in a skillet until they are slightly browned.
Now, add a little bit of vegetable oil or nonstick cooking spray to a skillet over low heat. You want to make sure that the bottom of the skillet is covered with oil so that the egg won’t stick to the pan. Once the oil is warmed, crack an egg into a bowl and gently pour the egg into the skillet over low heat. You want to make sure that you use low to medium heat to allow the egg to cook without burning the bottom. Use a spatula to keep the egg from spreading too much. Cook the egg to your liking. I like my yolk a little runny.
Toast slices of bread. Divide the avocado between the two toasts. Top each with a slice of ham. Then place the egg on top. Season with salt and pepper and a little bit of crushed red pepper for a spicy kick.
Serve the avocado toast warm.
