Warm cinnamon-y apples filled to the top with oats and walnuts, tasting like apple pie but without the crust. Quick and easy, healthy, and delicious, a perfect snack to chase away late afternoon hunger.
Whenever it hits mid to late afternoon, I start to get a little hungry. It’s too late for a small meal since it’s close to dinner time, but I’m not sure I can wait that long. A no bake baked apple is exactly the type of snack I’m looking for. It doesn’t take long to make, and there’s not much of a mess either. It’s sweet and cinnamon-y like apple pie yet still healthy. I originally saw a recipe for a no bake baked apple on a cooking show called The Chew. The recipe was called Daphne Oz’s Dorm Room Apple Snack. But I didn’t have all the ingredients needed to make that exact recipe. So I improvised and created my own.
My recipe is just for one apple, but you can easily duplicate it to create more. All you need are apples, oats, cinnamon, brown sugar, olive oil, and walnuts.
First, measure out the oats, cinnamon, and brown sugar. Combine and mix them together. Then add in the olive oil and chopped walnuts. Combine and mix well.
Wash the apple and start cutting through the core, using a small metal spoon.
Now, start to scoop out the center of the apple by digging with the spoon.
Hollow out the center of the apple so you can add more filling to the center. Make sure to leave the bottom intact.
Peel at least the top half of the apple. You can peel the apple in its entirety if you like. I only did the top half to demonstrate what the apple would look like if you left the skin on.
The reason for peeling the skin is because the apple starts to soften and shrink once it becomes cooked. If you leave the skin on, the apple begins to shrivel up in itself and doesn’t look as appealing. Take a look at the photo below. The inside of the apple softens, but the skin will remain tough.
Once you finish peeling the apple, fill the center with the oats and brown sugar mixture.
Place the apple in a bowl since juice from the apple will start to come out once you heat it up. Microwave the apple for 5 minutes. Allow the apple to cool for a minute or two before removing it from the microwave. Transfer the apple to a different plate and pour the juice that’s now in the bowl into the apple.
The no bake baked apple is ready to be eaten.
