It’s spring break!
I’ve never been soo excited for a little time off.
I feel I need the extra time to reorganize everything. Over the last few weeks, I’ve been so disorganized. I would get deliveries or birthday presents, open up everything, and leave boxes and wrapping all over the living room floor. So it’s kind of time to get organized and do a little spring cleaning.
Any tips and tricks for getting the house organized? I need all the help I can get!
With spring slowly arriving, it’s the perfect time for little gatherings. Like tea parties, baby showers, bridal showers, birthdays. I’ll take any excuse to hang out with friends. I’ve been a little antisocial lately, and I totally need to get out of my little shell. Small gatherings would be perfect for that.
Even though it’s been officially spring for a couple weeks now, it’s just starting to feel like it in the SF Bay Area. Some days it’s nice and warm. Other days… Not so much. So I’m thinking, indoor gatherings for now. At least, until the weather is a little more predictable.
So today, I’m sharing with you this baked honey thyme brie. It’s so buttery and soft, and so delicious topped with honey and thyme. Paired with crackers, it’s the perfect appetizer or afternoon snack.
There’s a couple things you need to know about brie though. The flavor and texture of brie changes over time. When the brie is young (about 20+ days before the sell by date), the interior is firm with a mild flavor. As it ages, the brie becomes creamier and richer in flavor, especially around the sell by date.
This baked brie requires just a few ingredients. A wheel of brie, honey, sprigs of fresh thyme, and crackers or bread for serving. All that melted goodness on a cracker. Sooo good.
Preheat the oven to 350F.
Line baking sheet with parchment paper. I like to line my baking sheet with parchment paper since sometimes the honey drips down the side of the brie. Honey caked onto the baking sheet is not fun to clean. So much easier when you can just remove the parchment paper.
Cut the rind from the top of the wheel of the brie.
Drizzle honey over the top. I personally love honey on brie so the more the better for me.
Top with sprigs of fresh thyme. You can also strip the leaves from the stem and sprinkle the leaves on top.
Bake the brie in the oven for about 10 minutes until the cheese has completely melted.
Serve the baked honey thyme brie warm with crackers or bread.
The brie is best eaten immediately but can be reheated and served later.

- 1 wheel of brie
- 2 tablespoons of honey
- 2-3 sprigs of fresh thyme
- crackers

I love brie! Will have to try this recipe out. Speaking of honey, goats cheese and honey is a yummy combination as well. As for tips on getting the house organised, I rotate my closet depending on the season. I store the out of season clothes in a suitcase and hide it under my bed then take it out when I need it. I also use laundry bags to store my socks and undergarments so my draws are not cluttered. Everything in the living has a compartment – I use those small block storage at Ikea to store vinyls, books etc. I stack the storage boxes on top of each other when I need extra space.
