I’m so excited to share with you this Blueberry Gin Mojito today!
I recently discovered this indigo gin, and I’ve been so excited to make cocktails with it. At first when you look at the gorgeous bottle, you’d think that the color is from the bottle. But in actuality, butterfly pea blossoms are added to the gin to give it that deep blue indigo color. And the amazing thing about butterfly pea blossom is that when lime juice or lemon juice is added to it, it changes to a vibrant purple color. Which makes this Empress 1908 gin so fun to play with in cocktails.
For this gin mojito cocktail, I wanted to use fresh blueberries and fresh mint leaves to give it a seasonal and refreshing taste. You can easily use other berries for this drink too. It’s super easy to make and so easy to custom to your own taste. I personally like my cocktails more sweet and refreshing with just a splash of alcohol. But you can easily add more of the gin if you prefer more of the alcohol taste.
In a small or medium glass, add fresh blueberries, mint leaves, lime juice, and granulated sugar. Use a muddler to smash all the ingredients for a few minutes to release all the flavor. Add crushed ice to the glass so that it’s higher than the mixture.
Pour the indigo gin so that it hits the crushed ice and not the blueberry mint lime mixture below. This will ensure that the gin stays that deep indigo blue color until you are ready to mix the cocktail.
Add more crushed ice and top off the drink with club soda then garnish with more mint leaves, crushed ice, and fresh blueberries.
Serve the Blueberry Gin Mojito immediately cold.
