It’s midweek so I thought I’d share with you a brand new dessert, just in case you want a little treat to get you through another week of sheltering in place.
Again, I’ve been working with small batches of dessert lately for those who might need smaller batches since we’ve all been sheltering in place. These small batch brownies have become one of my favorite desserts. I’ve always loved brownies as a middle of the day, even late night snack. But it’s kinda hard to have an entire batch of brownies and not be able to share with family, friends, and coworkers. So small batches are perfect for right now.
The reason these brownies are one of my favorites? They have that chewy edge that I love. All around the entire ramekin. And the center is super fudgy and oozing with melted chocolate. It feels like it has equal parts chewiness and fudginess. If you want less of a fudgy center, just bake the brownies for a few minutes more.
Plus, they make just two ramekins. So it’s perfect for you and one other person. Or it could all be for you and you wouldn’t have to worry about overindulging.

Preheat the oven to 350F. Lightly grease two ramekins with nonstick cooking spray or olive oil. Set aside for now.
In a small bowl, add butter and granulated sugar. Use a spatula to mix until just combined. Add vanilla extract and an egg and whisk until combined.
In a separate bowl, whisk together flour and cocoa powder until combined.
Pour the dry ingredients into the wet ingredients. Mix until combined.
Divide the brownie batter evenly between the two ramekins.
Bake the brownies in the oven or toaster oven for about 18-20 minutes.
Remove the ramekins from the oven, lightly sprinkle vanilla sea salt on top, and allow to cool for a few minutes.
Serve the small batch sea salt brownies warm dusted with powdered sugar.
