Sriracha Furikake Chex Mix

It’s been a really long week even though it’s not quite over yet. And I am so in need of a midweek pick me up.

So let’s talk about Asian snacks!

I’m kind of obsessed with them. The different textures, the different flavor profiles. I have been known to walk through the Asian snack aisle and buy all the new snacks that I see. That way I can try something new and different each time.

What I love is that these snacks are usually a mix of sweet and spicy and occasionally a little spicy. The flavors are so amazing and very addictive. I can sit in one place and finish a jar of snacks because they’re that addictive.

Filled with chex cereal, pretzels, mochi bites, and almonds in every handful, these snacks are so delicious and so perfect for sharing. You get the sweetness from the sugar, the umami salty flavor from the soy sauce, and spiciness from the Sriracha sauce.

Preheat the oven to 225F.

Line two large baking sheets with parchment paper.

Melt the butter and granulated sugar in a small pot over low heat. Once the sugar has melted, remove from heat and mix in vegetable oil, corn syrup, Sriracha, and soy sauce until well incorporated.

Place Chex cereal, mini pretzels, and mochi bites into a large mixing bowl. Pour the butter mixture over the cereal mixture and tossed until well coated. Pour the whole bottle of furikake seasoning into the mixing bowl. Toss until all the cereal is covered in the seasoning.

Divide cereal mixture onto the baking sheets. Try to place them in a single layer so that they will bake evenly. Bake the snack mix for about an hour or until the cereal is dry. Remove the Chex mix from the oven every 15 minutes and toss to prevent the cereal from browning too quickly or becoming burnt. Ovens sometimes have hot spots.

Let the Sriracha furikake chex mix cool before placing them into airtight containers.

Serve the Sriracha furikake chex mix as a snack or if you’re looking for a homemade gift, you can put these in mason jars and give them out as gifts.

  • ½ cup butter

  • 1 bottle 1.9 ounce nori furikake rice seasoning
