It’s been such a long week with six days of work, and I’m so glad that it’s finally the “weekend” for me. I’m looking forward to a day with nothing planned. Especially since the rain is back in the Bay Area. A little over a month left till summer officially starts and it’s still raining!
That said, I can’t picture a better way to start my day off than with brunch while staying in. As you already know, I’m obsessed with weekend brunch. If you don’t already know, well, now you do. Lol. And of course, brunch isn’t complete without a drink to accompany your food. My favorite? Mimosas.
Why? I love that you can combine champagne with any fruit juice of your choice. In this case, grapefruit. As much as I love a sweet mimosa, every once in awhile I like to change it up a little. Grapefruit juice is slightly bitter and gives your mimosa a unique flavor.
Simple ingredients. Super refreshing. And if you’re having friends and family over, you can quickly make a pitcher of this grapefruit mimosa to serve. Just remember to keep it at a 1:1 ratio. Or if you want to make it non-alcoholic, just top your grapefruit juice with either club soda or sparkling grapefruit soda. It’s perfect if you have kids.
Pour grapefruit juice into champagne glasses. Fill it to about halfway. Top the rest of the glass with sparkling champagne. For a nonalcoholic version, top with club soda or grapefruit soda.
Serve these grapefruit mimosas with crushed ice, fresh grapefruit, and mint leaves.
