I hope you’re in the mood for cookies this weekend. Because I’m ready to share another batch of homemade cookies with you. It’s another cold and rainy weekend, which means it’s the perfect time for baking in a small cozy kitchen.
This week is Valentine’s Day, plus my cousin’s birthday, so it’s extra special, and extra decadent. I don’t know about you, but I love the combination of strawberries and chocolate. So why not add two of my favorite ingredients into my cookies?
Soft in the center and chewy on the edges, these cookies are filled with dark chocolate and strawberries in every bite. Even better, as soon as the cookies are done baking in the oven, take the baking sheet out of the oven and drop the cookies on a sturdy surface a few times. All that melted chocolate will ooze into the crevices of the cookies. It is SOO good. I don’t know if I can ever make cookies any other way again.
I recommend using chocolate chunks for these cookies. Chocolate chips are ahmazing. I’ve used it in most of my chocolate cookies. But! Chocolate chunks often have more cocoa butter so when baking they melt better than chocolate chips which can retain their shapes. I mean, chocolate melting and spreading all over my cookies? Yes, please.
As for the strawberries, I used freeze dried strawberries for these cookies because fresh strawberries will make the cookies too soft. Dried strawberries add the flavor of strawberries yet still give us the texture of cookies that we all love.
Ready to bake some cookies to make your Mondays brighter?
In a small mixing bowl, whisk together butter, brown sugar, and granulated sugar until combined. Add egg and vanilla extract, then whisk until combined.
In a separate mixing bowl, whisk together all purpose flour and baking soda.
Add the dry ingredients into the wet ingredients. Mix until combined.
Fold in the dark chocolate chunks and freeze dried strawberries.
Refrigerate the cookie dough for about an hour.
When ready to bake the cookies, preheat the oven to 350F. Line a baking sheet with parchment paper. Set aside for now.
Use a cookie scooper or a tablespoon to measure out the cookie dough and roll them into balls. Place them evenly apart, about 12 cookie dough balls on a baking sheet.
Bake the cookies for about 10 minutes until the edges are slightly browned. Remove the cookies from the oven. Drop the baking sheet with the cookies on a sturdy surface a few times. By banging the cookies, the melted chocolate will fall into the crevices of the cookies.
Let the cookies cool for several minutes before transferring over to a cooling rack.
Serve these strawberry dark chocolate chunk cookies warm.
