Seriously, I can’t believe that it’s already August! And summer is already starting to come to an end. Not that it really started in San Francisco. Not yet anyway. Our summer doesn’t actually begin until September. And then it jumps right into fall. So if you want to visit our city when it’s not covered in fog or feel like you’re freezing, come during September or October. It’s our summer months.
I’ve been so busy all of July with dinners and events and work. I’m kind of excited to see that my schedule for August isn’t as packed. That means more days to relax and sleep in. More time to plan and cook. Just more time to do whatever I want. And more time for you. So relieved to be able to step back a little and enjoy life without all the hustle.
In the mean time, let me share this strawberry almond butter bread with you.
This strawberry jam and almond butter bread is actually inspired by Peanut Butter and Jelly. As much as I love peanut butter, and can eat them by the spoonful or in a peanut butter and jelly sandwich or with bananas, I’m super picky about peanut butter in my baked goods.
The first version I tried of this bread was with blueberry jam and peanut butter. I thought maybe I could convince myself to like them. Nope. Didn’t work. Not to say that other people didn’t like them. My coworkers loved it. But if I’m not a fan, I can’t share it with you guys. And I definitely can’t rave about it. So I had to substitute with almond butter. I used strawberry jam this time too because the blueberry jam made the bread look burnt.
I love that in every single bite of this strawberry almond butter bread is filled with sweet strawberry jam and the nuttiness of the almond butter. It’s just sooo good and so addictive. It’s like eating a peanut butter and jelly sandwich, but the nut butter and jam is completely incorporated in every inch of this loaf bread. SOooo good.
Preheat the oven to 350F. Lightly grease a 9×5 inch loaf pan with nonstick cooking spray. Set aside for now.
In a medium bowl, add all purpose flour, baking soda, salt, and ground cinnamon. Whisk until all the ingredients are incorporated.
In a large bowl, add melted butter, a large egg, brown sugar, buttermilk, and vanilla extract. Mix until combined.
Add the dry ingredients to the wet ingredients. Whisk until all the ingredients are combined.
Pour about a third of the batter into the prepared loaf pan. Now, drizzle almond butter on top. Use a knife to gently swirl the almond butter into the batter. Pour another third of the batter into the loaf pan and then add strawberry jam on top. Then pour the rest of the batter on top. Use a knife to swirl the strawberry jam into the batter.
Place the loaf pan in the oven and bake for about 45-50 minutes. Use a toothpick to check the readiness of the bread. If the toothpick comes out clean, the bread is done.
Allow the strawberry almond butter bread to cool down for several minutes before cutting into it.
Serve the strawberry almond butter bread warm.
