It’s my birthday today! And of course, I want to celebrate with you! So today, I’m sharing these colorful funfetti cookies on the blog! Because birthdays = sprinkles + dessert.
I can’t believe I’m turning 31 today. It felt like my last birthday was just yesterday. I don’t really have anything planned for today since it’s my grandma’s memorial, but we’ve been kind of celebrating my birthday since early last week.
And then with afternoon high tea at DarTealing Lounge and drinks at the View.
We’re probably going to continue throughout the month, just because it’s so hard to get everyone together these days. So most of the time, I just grab brunch, lunch, or dinner with friends, family, and coworkers whenever I can. But I’m most excited for the beginning of April when I’m headed to Philadelphia for a few days. It’s a late birthday present to myself since I haven’t taken that many days off in like, forever.
But let’s celebrate today with these funfetti cookies! And yes, I totally stuck a candle in the middle of a cookie. The candle melted a lot faster than I could take the photo I want so I ended up with a cookie topped with wax. Lol. See the first photo for evidence.
These funfetti cookies are crispy on the edges and chewy in the center. They’re filled with colorful sprinkles so they’re perfect for both spring and for any sorts of celebration.
In a medium sized mixing bowl, mix together butter, granulated sugar, and brown sugar until smooth. Add egg and vanilla extract, and mix until combined.
In a medium bowl, whisk flour, baking soda, and salt together until combined.
Now, add the dry ingredients into the wet ingredients until well combined. Add the sprinkles and mix until everything is well distributed.
Refrigerate the cookie dough for at least an hour or two and up to 24 hours.
When ready to bake, preheat the oven to 350F. Line a baking sheet with parchment paper or silcone mat.
Take the cookie dough from the fridge, and roll the cookie dough into about 1.5 -2 inches. Space the dough so that they’re not touching each other and have room to spread.
Bake the cookies in the oven for 10-12 minutes. Let the cookies cool for about 5 minutes before serving. Repeat with the second batch of cookies.
Serve these funfetti cookies same day for best taste, but can be kept for a few days in an airtight container.
