Funfetti Cookies

Chewy vanilla cookies filled with colorful sprinkles. These funfetti cookies are so festive and perfect for spring.
  • ½ cup butter at room temperature
  • ¼ cup granulated sugar
  • ¾ cup brown sugar
  • 1 large egg at room temperature
  • 2 teaspoons vanilla extract
  • 1¾ cup all purpose flour
  • ¾ teaspoon baking soda
  • ⅔ cup sprinkles
  1. In a medium sized mixing bowl, mix together butter, granulated sugar, and brown sugar until smooth. Add egg and vanilla extract, and mix until combined.
  2. In a medium bowl, whisk flour, baking soda, and salt together until combined.
  3. Now, add the dry ingredients into the wet ingredients until well combined. Add the sprinkles and mix until everything is well distributed.
  4. Refrigerate the cookie dough for at least an hour or two and up to 24 hours.
  5. When ready to bake, preheat the oven to 350F. Line a baking sheet with parchment paper or silcone mat.
  6. Take the cookie dough from the fridge, and roll the cookie dough into about 1.5 -2 inches. Space the dough so that they’re not touching each other and have room to spread.
  7. Bake the cookies in the oven for 10-12 minutes. Let the cookies cool for about 5 minutes before serving. Repeat with the second batch of cookies.
  8. Serve these funfetti cookies same day for best taste, but can be kept for a few days in an airtight container.
