We’re back to making simple breakfasts today.
I feel breakfast is one of those meals that we always have the least amount of time for. Which means we need to keep it as simple as possible. Eggs, toast, avocado, and seasoning. Or eggs, bacon, avocado, and seasoning. It’s as simple as it can get, right? Plus, the bright side is, you’re most likely to have all these ingredients at home already so no shopping needed.
I mentioned the other day that I recently bought Everything Except the Bagel Sesame Seasoning, and I seriously could not wait to get started using it. It’s really just a combination of sea salt, garlic, onion, and sesame, but it’s soooo good and works great on just about everything. You might just become as addicted to it as I am. It’s the perfect seasoning to use for your eggs, your toast, your bagels. You can get as creative as you like. What would you use your everything seasoning on?
What I love about this avocado toast is the creamiest of the avocado and of course, the egg that oozes out as you’re biting into it. Eggs, avocado, and toast = a happy Andrea.
To make this avocado toast, first poach the eggs. Crack eggs into a small bowl or a ramekin, and gently drop the eggs into simmering water. Allow the eggs to cook for about 4 minutes before using a slotted spoon to scoop the eggs out from the hot water. Set the eggs aside for now.
Toast the bread until browned.
Mash the avocado and spread it on the toast.
Top the avocado toast with poached eggs. Then sprinkle everything seasoning on top. Add as much or as little of the seasoning as you like.
Serve this everything spice poached egg avocado toast warm.

- 2 large eggs
- 2 slices of bread
- 1 large avocado
- Everything Spice Seasoning
- Pinch of salt, to taste

Some of the best meals are made of the simplest ingredients! I’ve eaten avocado whole wheat toast with Trader Joe’s Everything But the Bagel seasoning, but hadn’t thought to add a creamy, runny poached egg to it. I’ll have to buy a couple of avocados at the next grocery shopping spree and try the addition.
