I can’t believe tomorrow is Christmas!
I’m thinking we’re doing something low key. Lots of cookies, hot chocolates, cozy blankets, and Hallmark Christmas movies. What do you have planned for Christmas?
I’m super excited for a little time off, but I have to admit that I’m still wrapping up a few presents last minute for my family.
Thankfully I’m all done with the shopping portion. Otherwise, I’ll have to brave the mall and wait in long lines to get in those last minute gifts. And on a weekend too! Hopefully you’re all done with your Christmas shopping. But if you’re looking for a last minute homemade gift, or if you want a little treat for yourself on Christmas day, this peppermint white chocolate fudge is perfect for you.
All you need is a few ingredients: white chocolate, condensed milk, peppermint extract, and candy canes.
I love fudge. In small batches, that is. I have a major sweet tooth, but even I have my limits. If you’re a fan of white chocolate, this is definitely the holiday treat for you. It’s sweet with a hint of peppermint and topped with candy canes to give it a festive look as well as a slight crunch.
Line a 9×9 inch or 9×5 inch baking pan with parchment paper. You may want to grease the bottom lightly with nonstick cooking spray to make it easier to remove the fudge later. The fudge will be thinner if you use a 9×9 inch pan and thicker if you use a 9×5 inch pan.
In a small pot, add white chocolate and condensed milk over medium heat. Stir constantly until the chocolate has completely melted. I’ve used both white chocolate chips and baking chocolate for this fudge, you’re welcomed to use either. Make sure to stir constantly so that the chocolate doesn’t burn. Especially the chocolate at the edge of the pot.
Once the chocolate is fully melted, stir in peppermint extract until combined.
Pour the melted chocolate into the baking pan. Use a spatula to spread the chocolate evenly.
Sprinkle crushed candy canes on top, and refrigerate the fudge for about 4-5 hours.
Use a knife to slice the fudge about 18-24 pieces depending how large you like your fudge.
