Watermelon juice mixed with hibiscus tea then topped with club soda. This watermelon hibiscus sparkling soda is cool and refreshing, the perfect drink for a hot summer day.
Omigosh. I cannot believe that we’re already half way through August. Especially since I’m already hearing my sisters and cousins talk about going back to school. It’s so different when you’re working, isn’t it? Time sort of blends together and it’s not as clear as when you’re in school where summer starts and ends.
This summer has been such a busy time for me. I’ve been working more days. And when I’m not working, I’m in the kitchen making a mess for the blog. I’ve had so many recipe fails, especially in the last week! If you’ve kept up with my Insta-stories, you probably saw many of them. As well as some sneak peeks of fall. But if not, you’ll definitely see my collection of recipe fails at the end of the year.
In the next couple weeks, there’s so many events. My friend is getting married, and I’m a bridesmaid! I’m so nervous. I’ve never been a bridesmaid before so I have no idea what to do. But her wedding is on Labor Day weekend, so there’s a ton to prepare for before the big day.
But in the mean time, let’s go back to talking about summer. If you live away from the coast, all that warm sunshine is definitely a great indicator of summer. With so many fresh fruits available, I think it’s perfect to use them for a refreshing mocktail, like this watermelon hibiscus sparkling soda.
It’s super easy to make, tasty, and sooo refreshing. Then again, anything with watermelon is bound to be refreshing.
Soo… Watermelon juice, hibiscus tea, club soda, maybe a little sugar, and crushed ice. Simple enough, right?

Very pretty, I’d be tempted to put it in a martini glass with a maraschino cherry.
