I know shopping during Thanksgiving weekend brings up mixed feelings, but there are so many good deals that I couldn’t resist. And I have to say that I love looking at the toy section the day after Thanksgiving to see if there are any good sales. Sometimes I buy several board games so I can donate them to the toy drive once it gets closer to Christmas. If you’ve followed my blog for awhile now, then you probably already know why the children’s toy drive is soo important to me. So if you can, definitely consider donating to those kids who might not receive toys without our help!

But we have to get back to this leftover turkey noodle soup.

After indulging in all those Thanksgiving comfort foods, sometimes I want something lighter, something that’s warm and comforting but healthy.

This leftover turkey noodle soup is perfect for that!

Loaded with vegetables, leftover shredded turkey, and egg noodles, this soup is warm and comforting and just sooo delicious.

It’s a twist to the classic chicken noodle soup.

Of course, you can always make this soup with chicken instead of turkey. It’s all about preference and what you have.

Leftover Turkey Noodle Soup | Cooking with a Wallflower

In a medium pot, cook about 3-4 ounces of egg noodles according to the direction on the package. You can also use pasta if that’s more convenient. Drain the egg noodles and run them through cold water to prevent them from continuing to cook and from sticking to each other. Set the egg noodles aside for now.

In a medium sized pot, add about 2 tablespoons of olive oil over medium heat. Allow the olive oil to heat for about a minute. Once the olive oil is heated, add onions, celery, carrots, and mushrooms. Cook for several minutes until the vegetables are tender.

Pour in the turkey/chicken broth. You can make your own turkey broth using the turkey carcass or use chicken broth, whichever is more convenient. Season with dried thyme and salt.

Allow the soup to simmer for a few minutes. Add the corn kernels, peas, and turkey, and cook for a few more minutes until all the ingredients are warmed through. Lastly, add the egg noodles before serving.

Serve the soup warm.

Ingredients
  • 3-4 ounces egg noodles
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 ribs celery, chopped
  • 1 ½ cup mushrooms
  • 4 cups turkey/chicken broth
  • 1 teaspoon dried thyme
  • ½ teaspoon salt, more to taste
  • ½ pound shredded leftover turkey (1 ½ -2 cups)
  • ½ cup frozen corn
  • ½ cup frozen peas
