I say this every month, but can you believe that another month has gone by?

As it gets closer and closer to the end of the year, it feels like time goes by so quickly. The first part of the year always goes by so slowly. Maybe it’s because there aren’t any holidays to look forward to? But the moment it hits summer, I feel like we have to hit the ground running. The closer it gets to the end of the year, the busier I get. And I love it! For some weird reason, the busier I am, the more inspired and more creative I get and the more things I want to do.

This past weekend, my friend Kim from SweetKimplicity got married in a gorgeous DIY wedding at Sesnon House in Aptos. Every detail was just so pretty. The food was amazing. The music brought us back to the 90’s. As in Backstreet Boys and 98 Degrees! And instead of a wedding cake, Kim chose to go with two types of pies from Gizdich Ranch in Watsonville: ollalieberry and Dutch apple pie. Oh my god, the Dutch apple pie was sooooo good. Kim had a several pies leftover so I took one with me, and I’m savoring every single bite.

Today, I’m sharing with you a major comfort food. Because let’s be real. Anything with garlic butter is a comfort food, definitely my type of comfort food.

There are two things in this dish that I really love, flavor wise. Garlic butter and miso.

Have you ever cooked garlic in butter? If you haven’t, you’re missing out! Cooking garlic in any type of oil smells amazing. But in butter? I swear, my mouth waters. There’s nothing like it.

Then, there’s miso. Just a little bit of miso and your dish will be bursting with flavor. So I like to keep miso in the fridge. It lasts forever!

When you combine both miso and garlic butter, you get a savory dish that’s so packed with flavor. I added only a few extra ingredients to keep the dish simple, but you can always add more vegetables to add more color.

First, cook your noodles in a medium sized pot according to the directions on the package. I used Shanghai noodles. But you can use fresh ramen or pasta noodles, whatever is more convenient for you. Drain the noodles and run them through cold water to prevent them from continuing to cook and from sticking together.

In a large skillet, add butter over medium heat. Allow the butter to heat up and melt. Then add minced garlic. Cook the garlic until they become aromatic and lightly browned.

Add sliced mushrooms and cook until they become soft and tender. Add the oyster sauce, chili paste, vegetable oil, white miso paste, and water. Stir until the mushrooms are coated in the sauce.

Add the shrimp and cook them until they start to turn reddish orange. Shrimp cooks fast so you don’t want them to overcook.

Now, add the cooked noodles. Toss until the noodles and shrimp are evenly coated. Add fresh basil and toss with the noodles.

Ingredients
  • 1 pound thick noodles (Shanghai noodles, ramen, or pasta)
  • 4 tablespoons unsalted butter
  • 6 cloves of garlic
  • 8 large mushrooms, sliced
  • One dozen jumbo shrimp
  • 2 tablespoons oyster sauce
  • 1 tablespoon chili paste
  • 2 tablespoons vegetable oil
  • 1 ½ - 2 teaspoons white miso paste
  • ¼ cup water
  • 1 sprig basil, roughly torn
Directions:
  1. First, cook your noodles in a medium sized pot according to the directions on the package.
