Soft tacos filled with mixed greens, honey peach BBQ shredded chicken, diced tomatoes, corn, and shredded mozzarella. These summery honey peach bbq chicken tacos are super easy to make and absolutely delicious.
It’s the end of the summer, which means the last of peaches, berries, and barbecuing. And I wanted to make the most of my summer favorites while they’re still around.
So, of course, I wanted to celebrate the end of summer with you by sharing these honey peach BBQ chicken tacos!
Seriously, it’ll be your new favorite summer comfort food.
These soft tacos are filled with mixed greens, sweet and savory with a hint of spicy honey peach BBQ shredded chicken, fresh diced tomatoes, corn kernels, and freshly grated mozzarella. Plus, you can always add your favorite ingredients: avocados, salsa, guacamole, sour cream, beans, more cheese. The possibilities are endless.
It’ll be one of those dishes you’ll always want to come back to when you’re looking for a quick and easy meal, or for your next DIY taco party, or your next family gathering.
Comfort foods are traditionally rich and heavy dishes that are the perfect indulgence. But these days it’s all about the new comfort foods, dishes that are healthy and perfect for the everyday occasion.
I love using fresh local seasonal ingredients in my dishes, especially when they’re so readily available at the farmer’s market. Peaches, corn, tomatoes, they’re all at their peaks right now.
To accompany these seasonal produces, I used locally grown in California Foster Farms Simply Raised Chicken, which is antibiotic free, 100% vegetarian fed, American Humane certified, with no added hormones.
Using these ingredients, I wanted to create a new comfort food, something that’s easy to make, relatively healthy, and perfect for the everyday meal. These tacos are just that.
Set all the fresh, easy to find ingredients on the table and you and your family or friends can create your own perfect tacos.
You’ll have a fun and delicious meal in no time.
First, add olive oil to a large skillet over medium high heat. Once the olive oil has heated, carefully place the chicken breast into the skillet to avoid splashing. Cook the chicken for a couple minutes until the side faced down starts to brown a little.
Flip the chicken over and cook for about a minute or two. Cover the skillet tightly with a lid and lower the heat to low. Allow the chicken to cook on low heat for about 10 minutes. After the 10 minutes, turn off the heat but keep the skillet covered! Don’t remove the lid for an additional 10 minutes. Once those 10 minutes are over, remove the chicken from the skillet and shred them with two forks.
While the chicken is cooking, you can quickly make your honey peach BBQ sauce.
Add diced peaches and a little water over low heat. Allow the peaches to cook down until it becomes jam like. Add crushed red peppers, honey, and honey BBQ. If you prefer a less sweet sauce, you can use your favorite BBQ sauce. It doesn’t have to be honey BBQ. Stir and allow the sauce to simmer until it is well incorporated.
Once the sauce and the chicken are both ready, pour the sauce over the shredded chicken and toss until the chicken is coated with the sauce.
To make the tacos, heat the tortillas. I used corn tortillas, but you can use whatever tortillas you like.
Add a handful of mixed greens. Top with honey peach BBQ shredded chicken, corn kernels, diced tomatoes, and shredded cheese.
Serve the tacos with your favorite condiments.
If you like, you can prepare all the ingredients and set them in little bowls on the table. You and your guests have a little DIY taco party. So easy and fun to do.

- 1 ½ tablespoon water
- ½ cup honey BBQ sauce (or favorite BBQ sauce)
- ⅛ cup honey
- Mixed Greens
- Tortillas
- Corn kernels
- 1 large tomatoes, diced
- Shredded Mozzarella cheese
- Avocado
- Guacamole
- Salsa
- Beans
