Homemade snacks filled with dried blueberries, dried cranberries, chopped almonds and sweetened with honey. These Berry Almond Rice Crispies Snack Bars are the perfect snack to carry when on the go.
Homemade snack bars! Finally!
So one of the things I like to do when I’m out shopping at Costco is walk down the snack aisle and browse through the tons of snack varieties that they offer. The problem is that Costco, or any wholesale warehouses you guys have nearby, sells things in bulk. Which means that if I want a box of granola bars or trail mix bars or granola bites or fruit snacks, I’ll have to eat through nearly a hundred of them before I can buy something else. And if you’re like me, halfway through the box, you’ll probably want something else to snack on.
I love that it’s so cheap to buy things in bulk, but sometimes I need a little more variety in my life. For the sake of my taste buds.
Do you feel the same way?
My solution? Homemade snack bars!
Now, you can make your own snack bars at home and in smaller quantities. Yay! Then you can customize the ingredients however you want. Double yay! If you like cashews or pistachios, you can use those instead. Or if you prefer raisins or dried cherries, you can use those. Or if you like your snack bars to be less sweet, you can lessen the sweetener a tiny bit. You can’t eliminate too much of the honey otherwise the snack bars won’t bind together. Then you’ll have more of a granola variety rather than a snack bar, which is totally fine too!
Snack bars are so easy to make. Plus, they’re the perfect size to carry around when you’re in a hurry to leave the house for work or school. Or if you need a snack to bring with you on a hike or a road trip.
These berry almond rice crispies snack bars are chewy and crunchy. Both sweet and nutty.
The texture and flavor are soo amazing. I think you’ll like these snack bars as much as I do!
Snack bars are great when paired up with Naked Cold Pressed Juice. These cold pressed juices are made from the highest quality ingredients of fruits and vegetables with no sugar added and no preservatives. They’re also non GMO project verified. These cold pressed juices are refreshing and delicious and come in five different flavors. So it’s super easy to grab your favorite bottle and a couple snack bars for when you’re heading out for a hike, to work, on a road trip, or to wherever your latest adventure takes place. You can find these juices at your local West Coast stores, but they’ll soon appear nationwide.
First, preheat the oven to 300F. Line a 9×9 inch baking pan with parchment paper so that it hangs over the side. You want to be able to remove the parchment paper easily from the pan later when you cut the bars.
In a medium sized mixing bowl, add honey, vanilla extract, almond meal, and almond butter. Use a spatula to mix the ingredients until they are well incorporated. The mixture will look thick and buttery.
Fold in the chopped almonds, dried blueberries, dried cranberries, and rice crispies until they are combined.
Next, place the mixture into the baking pan and flatten them against the bottom of the pan. I used the back of my spatula to do this. You want to pack the mixture as tightly as possible so that they’ll stick together.
Place the baking pan into the oven and bake for 20 minutes.
Remove the baking pan from the oven and allow them to cool for an hour. Place the baking pan in the fridge to chill for an additional hour to allow for firmness.
Remove the bars from the fridge and slice them into 12 bars. If you’re like me, your bars are probably going to be in different sizes. I apparently have a very bad sense of judgment when it comes to fractions.
Individually wrap the bars in plastic wrap or in parchment paper in the fridge. Or you can leave them in an airtight container in the fridge. These bars are sticky so you’ll want to keep them individually wrapped so that you can grab them easily when you’re rushing out the door.
