Berry Almond Rice Crispies Snack Bars

Homemade snacks filled with dried blueberries, dried cranberries, chopped almonds and sweetened with honey. These Berry Almond Rice Crispies Snack Bars are the perfect snack to carry when on the go.
  • ⅓ cup honey
  • ⅓ cup almond meal
  • 1 tablespoon almond butter
  • ½ teaspoon vanilla extract
  • 1 ¼ cup chopped almonds
  • ⅓ cup dried cranberries
  • ⅓ cup dried blueberries
  • ½ cup rice crispies cereal
  1. First, preheat the oven to 300F. Line a 9x9 inch baking pan with parchment paper so that it hangs over the side.
  2. In a medium sized mixing bowl, add honey, vanilla extract, almond meal, and almond butter. Use a spatula to mix the ingredients until they are well incorporated. The mixture will look thick and buttery.
  3. Fold in the chopped almonds, dried blueberries, dried cranberries, and rice crispies until they are combined.
  4. Next, place the mixture into the baking pan and flatten them against the bottom of the pan. Pack the mixture as tightly as possible so that they’ll stick together.
  5. Place the baking pan into the oven and bake for 20 minutes.
  6. Remove the baking pan from the oven and allow them to cool for an hour. Place the baking pan in the fridge to chill for an additional hour to allow for firmness.
  7. Remove the bars from the fridge and slice them into 12 bars.
  8. Individually wrap the bars in plastic wrap or in parchment paper in the fridge. Or you can leave them in an airtight container in the fridge. These bars are sticky so you’ll want to keep them individually wrapped.
  9. Enjoy these snack bars!
