Um, where has this been all my life?

I love the combination of honey and cheese. There’s something about the flavor that’s so amazing. The creaminess of the cheese and the sweetness of the honey complement each other so well. Then add the juiciness of sweet blueberries and you have a delicious appetizer to impress your family, friends, and guests.

I’m completely in love with brie and honey and I’ve been trying different combinations to see what tastes the best. One of my favorites? This baked brie with honey and blueberries. You need to try this. And if you’re hosting for the Super Bowl this Sunday, it would be the perfect time to try this out.

And speaking of Super Bowl 50, has anyone been to Super Bowl City? I live in the city, and I’ve been avoiding that area of SF as much as possible. I hear it’s super chaotic, especially with all the Tent City protests and security. My sister who interns at a hotel in the area tells me it’s very crazy out there.

First off, if you have never baked with brie before, you want to make sure that it’s as young as possible. You want the brie to be about 10-20 days before the sell by date. The longer it is from the sell by date, the more mild the flavor. The more the cheese ages, the stronger the flavor, and the more bitter it becomes. So unless you like strong cheese, go for the young brie.

This baked brie is super easy to make and takes maybe 5 minutes to put together.

Preheat the oven to 350F. Line a baking sheet with parchment paper. Don’t forget this step! If you can see in the photo, I forgot to do it. And guess what? The honey baked onto the pan and hardened. I had to cover my baking pan with baking soda for hours before all that honey came off. So don’t be like me, and remember the parchment paper.

Place the brie onto the parchment lined baking sheet/pan. Drizzle a generous amount of honey on top. I used about ¼ cup, but you can definitely add a lot more. I personally think the more, the better.

Top the brie with fresh or frozen blueberries.

Bake them in the oven for about 15 minutes.

Remove the brie from the oven and place them on a plate.

Cut through the rind and you’ll see gooey melted cheese.

Serve the brie with honey and blueberries with crackers or bread.

Enjoy!
