Toasted marshmallows and melted peppermint bark sandwiched between graham crackers. These Peppermint Bark S’mores are great for the holidays and the perfect way to use up those extra peppermint barks you have leftover (if any).
Okay. So this post might have come a tad too late. Sort of. Cuz this was what I was enjoying Christmas Day while unwrapping my presents under our Christmas tree.
I should have shared it earlier, huh?
But! If you have any leftover peppermint bark, and that’s a big if, I know, you can use them up to make this deliciously messy, ooey, gooey, peppermint-y, s’mores.
You know you want to make them. Just picture each warm bite of this little treat filled with toasted marshmallows and melted peppermint bark. You get both white chocolate and milk or dark chocolate in one dessert! How much more perfect can it get?
And how can you resist this wintery goodness when it takes you 30 seconds to prepare and at tops, 5 minutes to melt and toast?
First, preheat the oven to about 350F, or you can place it under the broiler setting. Whichever works. But if you’re using the broiler setting, make sure to watch your s’mores so that it doesn’t become burnt.
Break graham crackers sheets in half. Top the graham cracker sheets with peppermint bark squares. I used Ghirardelli, but you can use whatever you have. For an extra sweet and peppermint-y flavor, you can add extra square, but one should be enough. Top the peppermint bark with a big marshmallow, or many small ones.
Place these on foil because it’s going to melt messily, and into the oven. Allow the marshmallows to toss until they become brown on top and the peppermint bark has melted, about 3-5 minutes.
Remove them from the oven and drop a graham cracker half on top.
Serve the s’mores warm.

- 4 graham cracker sheets
- 2 large marshmallows
- 2 peppermint bark squares
- Preheat the oven to 350F or turn it to the broiler setting.
- Break the graham crackers in half.
- Place the peppermint bark square on each two graham cracker halves, then place a marshmallow on top.
- Place the s’more into the oven and toast for about 3-5 minutes until the marshmallows have browned and the chocolate has melted.
- Remove the s’mores from the oven and place graham cracker halves on top.
