Sweet strawberries covered in a creamy honey Greek yogurt. These strawberries are delicious and healthy, perfect as a guilt free snack to stave off those afternoon cravings for sweets.
It’s time for another guilt free dessert recipe!
A couple weeks ago, I posted a recipe for Frozen Greek Yogurt Blueberry Cups, which contained ingredients similar to this one. However, instead of blueberries, this time I used strawberries. I love strawberries dipped in chocolate. Don’t you? But there’s only so many of those I can eat before I start to feel guilty.
These strawberries are mostly guilt free and look as though they’ve been dipped in white chocolate. I added a little bit of star sprinkles for decoration and melted chocolate to make the little stripes. Honey Greek yogurt dipped strawberries are great as snacks and it’s perfectly okay to have as many as you want. If you prefer to use the Greek yogurt as a dip, you can just dip the strawberries in them. If you prefer the Greek yogurt to be slightly frozen to resemble chocolate, freeze them for an hour before serving. It’s so easy to make. The hardest part is the waiting.
First, wash the strawberries but don’t remove the leaves and stem. The strawberries look better that way. Make sure that the strawberries are completely dry. Why? I noticed that if the strawberries are still wet, the water mixes with the yogurt and dilutes it. The yogurt thins out and slides off the strawberries. If the strawberries are dry, the yogurt remains thick and clings better.
In a medium sized bowl, add Greek yogurt and honey and use a spoon to mix them together. Stir until the honey is evenly incorporated into the yogurt, and the yogurt becomes smooth and creamy.
Dip the strawberries individually into the yogurt. Coat the tip of the strawberries up to a ½ to 2/3 of the whole strawberry. You can actually just eat the strawberries this way. Keep the strawberries cold and then eat them dipped with honey Greek yogurt. This is perfect for a quick snack. It’s so tasty with the slight flavor of honey and the creaminess of the Greek yogurt.
For frozen honey Greek yogurt strawberries, set the strawberries on a freezable container lined with parchment paper.
If you want to decorate the strawberries with sprinkles, you should add them while the yogurt is still creamy. I really love using stars. They’re colorful, simple, and cute.
Cover the strawberries with a lid or a plastic wrap. Place them into the freezer and allow them to chill for about an hour to an hour and a half. The Greek yogurt will start to solidify at this point but it won’t be hard. The strawberries will be icy cold but not completely frozen. This is what you’re looking for.
If you leave the strawberries in the freezer for longer than this amount of time, two things will happen. One, the yogurt will harden to the point where they appear crystallized, which is fine with the blueberry cups but not with the strawberries. It’s harder to eat the strawberries when the yogurt is completely hardened.
Two, the strawberries will be completely frozen, which means you’ll have to wait for them to defrost. However, the strawberries will become super soft after they’ve defrosted. The texture would be similar to super ripe strawberries.
It’s important to remove the strawberries after 1 – 1½ hours and serve them immediately.
Does it sound like a hassle? Not really and even if it is a little bit, the result is soo worth it!
If you decide that you want to decorate the strawberries with a little bit of chocolate, melt about two tablespoons of morsels. You won’t need much. I melted more. You can use semi sweet, dark chocolate, or milk chocolate morsels. The quickest way would be to microwave them for about 10 seconds and stir. Add a few more seconds if the morsels are not completely melted, and repeat as needed.
I used a spoon to quickly drip the melted chocolate on the frozen Greek yogurt portion of the strawberries. I moved the spoon back and forth to create the pattern I wanted. The coldness of the yogurt will help the chocolate quickly solidify. Don’t they look like white chocolate covered strawberries? But they’re not. And yet they taste so delicious!
Serve them immediately before the Greek yogurt starts to melt. Be careful though. The strawberries are very cold. I had a brain freeze =)
