It’s been a whirlwind on my end.
I thought that I’d have time to work on recipes and write blog posts. But it has been one thing after another, and I had to step away for a bit. I’m still cooking and photographing dishes. So there’s a ton of recipes waiting to shared. But it’s been harder to sit down and write and edit photos.
Let’s catch you up on my life.
Since the new year, we’ve had relentless rains. From thunderstorms to hail to snow. In the Bay Area. We don’t normally have that kind of weather here. There’s been a lot of streets flooding, trees falling, and power outages in our city.
My husband started a new role right before we got married. But it’s been super stressful for him. Especially since now it’s been more difficult separating work from home life. It used to be that once he leaves work, it stays at work. But these days, it’s not as easy to do.
My parents and my niece got covid a few weeks ago.
And I’ve been working more days.
We took a couple of amazing cooking classes and learned how to make laksa from scratch. We also did a Asian Euro cooking class.
Also! I just celebrated a birthday and turned 36. Which I know is just a number. But for whatever reason, it feels like more. Almost as if I’m running out of time to do all that I want to do. Which I obviously know is not true, but how I feel all the same. So it’s been a little rough lately.
But! I want to share this salted honey pistachio brie puff pastry.
If you’re a fan of brie, this salted honey pistachio brie puff pastry will be the perfect appetizer and snack for you. You can serve it when you have friends over. You can serve it as part of a date night in. It’s great as part of your wine and cheese night.
To make this dish, preheat the oven to 425F. Line a baking sheet with parchment paper and set aside for now.
Slice off as much of the rind on the brie as much as possible. Or if you like it, you can keep the rind on. Cut the brie into cubes. You can either use a round brie or a wedge of brie. Either works.
Place the brie in the center of a puff pastry sheet. Take each corner of the puff pastry sheet and pull it to the center to cover the brie.
Whisk together an egg and milk to create an eggwash. Brush the egg wash over the puff pastry. This helps the pastry to brown evenly.
Sprinkle coarse sugar over the puff pastry.
Bake the brie puff pastry for about 20 minutes until the puff pastry has browned and the cheese has melted.
Drizzle honey on top. Add crushed pistachio and then sprinkle a pinch of salt on top.
Serve the salted honey pistachio brie puff pastry immediately while the cheese is warm and melted.

1 brie triangle, cubed
!Eggwash
1 large egg
1 tablespoon milk

Coarse sugar
Honey
Crushed pistachio
Pinch of salt
