It’s been a minute. So many things have been happening behind the scenes. And I’ve been struggling to balance family, wedding planning, work, and blog. I honestly don’t know how to make time for everything. Our wedding is in six months and we haven’t actually signed any contracts yet.
The struggle has been real. So, bear with me while I figure things out.
Today though, I’m making time to share with you this brown sugar milk tea with grass jelly.
Milk tea is one of my favorite drinks. I am almost always craving it. The flavor of strong brewed tea, the creaminess of the milk, the sweetness of the brown sugar syrup, the chewiness of boba or grass jelly. It’s all so very addictive. And my favorite. But in the next few months, Gordon and I are trying to eat out less and eat better. Both to prepare for our wedding and to be better about our eating habits.
So I’m making my own at home to stave off the cravings. And that way, I know exactly what goes into my drinks and I can control the amount of sugar.
Strong brewed black tea mixed with your favorite milk. You can use non-dairy, whole milk, or half and half. It just depends on your preference and how creamy you want your milk tea to be. Sweetened the black milk tea with a brown sugar syrup. Then add grass jelly, which I buy in a can from Asian supermarket. It’s pretty similar to jello in texture. It’s super refreshing and perfect for warm days.

In a medium sized pot, add about 4 cups of water and bring it to a low boil. Remove from heat. Add black tea leaves to the water. Let it steep for at least 5 minutes.
Allow the tea to cool down before straining.
While the tea is cooling, make the brown sugar syrup. In a small pot, add brown sugar and water and melt the sugar over low heat. Stir to prevent the sugar from sticking to the bottom of the pot. Let the brown sugar cool to thicken.
Pour the cooled tea into a glass and top with half and half, whole milk, or non dairy milk of choice.
Spoon the brown sugar syrup and drizzle it over the sides of the glass. Add grass jelly to the drink.
Serve the brown sugar milk tea with grass jelly and crushed ice.

Ingredients
Brewing Tea
4 cups water
2 tablespoons loose oolong tea leaves
1 tablespoon loose jasmine tea leaves
Brown Sugar Syrup
½ cup brown sugar
¼ cup water
For each serving
1½ – 2 cups brewed tea
¼ cup half and half/whole milk/ non dairy alternative, more or less to taste
3 tablespoons brown sugar syrup, more or less to taste
Grass jelly
Crushed ice
