After an amazing birthday getaway in Sonoma Valley this past weekend, it’s been a little difficult getting through the work week. Do you ever feel like that after returning from a trip? Even a short one? You had so much fun relaxing and wining and dining that you don’t want it to end. It makes me wish I was back on vacation, even if it’s just a little one.
But since we’re not going on another getaway any time soon, I thought I would create a cocktail that would make us feel like we’re being transported to a vacation spot. This strawberry gin sparkling lemonade.
Sweet strawberries, freshly squeeze lemon juice, sugar, gin, club soda, and ice. All the ingredients that you need to make this refreshing cocktail that’s perfect for both spring and summer.
While you can use any gin that you have on hand, I used Empress 1908 Gin, which contains butterfly pea flower. The flower gives the gin a dark indigo blue color. And when mixed with lemon juice turns into a purple color. It makes a cocktail a lot more fun and festive.

In a glass, add strawberries, fresh squeezed lemon juice, and sugar. Use a muddler to smash all the ingredients together until the strawberries are in small bits.
Fill the glass with crushed ice until it’s above the strawberry mixture.
Pour in the gin, and add more ice.
Then top the cocktail with club soda and more ice.
Garnish the strawberry gin sparkling lemonade with fresh mints and serve cold.

- 2 tablespoons lemon juice
- 2 teaspoons granulated sugar
- Crushed ice
- 2 oz Empress 1908 Gin
- ⅓ cup club soda
- Crushed ice
- Mint for garnish
