Growing up, I was a fan of Neapolitan ice cream. I always thought it was fun to eat because there were multiple flavors in one container. You can pick the flavor you want in that moment. Vanilla, strawberry, or chocolate. Which do you like the most? Mine was probably strawberry.
So when I stumbled across these Neapolitan sugar cookies, I knew that I had to try them as soon as possible. I love that there are multiple flavors in a single cookie. That means that every bite will be slightly different. And they’re so pretty that they’re perfect for gifting or for any gathering.

Preheat the oven to 350°F. Line a large baking sheet with parchment paper or silicone baking mat. Set the baking sheet aside for now.
In a large bowl, beat together the butter and granulated sugar until they are smooth. Next, add the egg and vanilla extract and beat until combined.
In a medium bowl, whisk together the flour, baking powder, and baking soda.
Add the dry ingredients to the wet ingredients, and mix until just combined.
Divide the dough into three equal portions. I obviously am not good at dividing them equally. Lol. Add cocoa powder to one bowl, matcha powder to the next, and leave one with just vanilla.
Take 1/2 tablespoon of each dough and combine the dough by rolling them into a ball.
Roll the cookie dough balls in a bowl of sugar until the entire ball is coated.
Place the dough balls on the prepared baking sheet, leaving 2 inches between each ball. Bake the cookies for 8-10 minutes, until the edges of the cookies are golden brown. Let the cookies cool on the baking sheet before transferring to a wire rack.
Serve the matcha chocolate Neapolitan sugar cookies warm.
