Slices of cucumber, simple syrup, lemon juice, and gin mashed together for a few minutes then topped with ice and club soda. This cucumber collins is refreshing and perfect for a late summer cocktail.

It’s been so hot lately in the Bay Area. But unfortunately we couldn’t enjoy the heat at the beach or the park or even have the windows open with all the smoke hovering in the air due to the wildfires all over our state. So we’re doing all that we can to keep cool and enjoy the last of the summer as best as we can.
A few weeks ago I received indigo gin from Empress 1908 Gin. And to be honest, I’ve been so obsessed with the gorgeous color of the alcohol. Empress 1908 Gin contains butterfly pea flower tea, which gives it that deep indigo blue color. The fun thing about butterfly pea flower tea, which I’ve talked about before, is that when you add lemon juice or any citrus to it, the color will change from a dark blue to a vibrant purple. And that is exactly what this indigo gin does. If you don’t have indigo gin, you can use regular gin too. It’ll taste just as amazing.
Cucumber is super refreshing, especially on a hot summer day. So adding cucumbers to a cocktail sounds like it’s exactly what we want to celebrate the end of the summer. Cucumbers, mint, lemon juice, and gin with a splash of club soda. It’s the kind of cocktail you’ll want to drink on a warm day.
In a glass jar, add simple syrup, lemon juice, slices of cucumber, and gin. Use a muddler to smash all the ingredients for a few minutes to release all the flavors. To make the simple syrup just add the same amount of sugar and water to a pot and heat until all the sugar has dissolved. I personally love using elderflower syrup. So I used that in place of simple syrup.
After a few minutes, pour the gin mixture through a strainer into a different glass. Fill the glass with crushed ice. Add long slices of cucumbers to the glass. Then top the glass with club soda and mint leaves.
Serve this cucumber collins cold.

- 1 oz elderflower syrup/simple syrup
- 5 slices of cucumbers
- 1 oz lemon juice
- 2 oz gin
- Crushed ice
- Mint leaves
- 2 long slice cucumbers
