I feel like we’ve had endless rain lately. And all those mornings when it’s dark, cold, and wet out, I wish I could be lazy and lounge in bed all day. But since I don’t really have much of a choice, I need a good breakfast to motivate me to get up in the morning.
This chai oatmeal latte tastes soo amazing. If you’re a fan of chai tea latte, then this oatmeal latte would be perfect for you. Chai tea steeped in almond milk. Add a pinch of cinnamon, a little bit of vanilla, and a touch of maple syrup for sweetness. The oatmeal soaks in the flavor of chai tea. Topped with whipped cream and granola, this chai oatmeal latte is an indulgent breakfast.

Heat almond milk in a small pot over low heat. Once the almond milk comes to a simmer, add two bags of chai tea. Remove the pot from heat and let the chai tea steep for several minutes.
Press the tea bags to squeeze out the almond milk, and remove the tea bags.
Heat the chai milk tea over low heat. Stir in ground cinnamon, vanilla extract, and maple syrup. Add old fashioned oats. Cook for a few more minutes until the oats are cooked.
Remove from heat and pour the chai oatmeal latte into a small mug.
Top with whipped cream and granola.

Just made this this morning and it was fantastic. Perfect splurge when you have time to make breakfast. I didn’t have any whipped cream so I used whole plain yogurt instead and it worked with it. Thank you 🙂
