It’s my birthday! And, of course, I want to celebrate with you!
I turn 32 today, but it’s kind of hard to believe. Time passes by soo fast these days.
But since I haven’t been able to celebrate my birthday the last two years, not really anyways, it’s about time I celebrated just a little.
And what better way to celebrate than with lots of chocolate, right?
One of my favorite desserts is the fudgiest of brownies. Chewy on the edges and sooo fudgy in the center, brownies are the ultimate chocolate dessert. So delicious, so perfect, so addictive. I mean, how can you stop with just one?
Ten years ago…. I cannot believe that it’s been ten years! But ten years ago, this was my favorite middle of the night snack. I often stayed up late studying for exams during college, and I liked to take breaks late night to bake brownies. If you have never baked brownies late at night, you have to. Somehow brownies seem to taste even better when they come straight from the oven in the middle of the night. And the aroma of chocolate drifting in the air into your room is just drool worthy.
And oh, in case you’re wondering, my favorite part of the brownie is the edge. Are you an edge fan or a center fan?
Preheat the oven to 350F. Line a 9×13 inch baking pan with parchment paper or lightly grease with nonstick cooking spray. Set aside for now.
In a microwave safe bowl, add butter and 2 ounces of chopped chocolate. Melt in 30 second increments, mixing after each, until completely smooth and melted. Whisk in granulated sugar and brown sugar until combined. Then whisk in the eggs and the vanilla extract until combined.
Add cocoa powder, all purpose flour, salt and the remaining chopped chocolate. Fold the ingredients with a spatula or a wooden spoon until combined. The batter will be thick. Spread the batter even on the baking pan.
Bake for about 25-28 minutes. Test the brownies for readiness by inserting a toothpick in the center. If the toothpick comes out mostly clean, the brownies are done. If the toothpick looks wet with batter, bake the brownies and check every minute or two until the toothpick comes out mostly clean.
I may have stolen an edge. lol.
Remove the brownies from the oven and allow it to cool completely in the pan before slicing into squares. You can either drizzle the salted caramel before cutting or drizzle the salted caramel on each individual brownie bar before serving.
