I thought we could start the week right with this everything spice grilled cheese sandwich. It’s the ultimate comfort food, and the perfect option for a weeknight dinner.
It’s another short weekend for me this week since I had to work Saturday, and I don’t have MLK day off. But we’re going wedding cake tasting today! My friend is getting married in April so over the next few weeks we’re doing cake tasting and food tasting for the wedding.
We’re more than halfway through January, and I’m so amazed at all the things I have already done, and all the things I’m planning to do in the next few months. My sister and I just booked our flights to New Orleans. It’s been awhile since I’ve visited. So I thought it’d be the perfect place to go for my birthday and for my sister’s spring break.
My last trip was super short. I think we flew in on Friday, attended my cousin’s wedding on Saturday, explored on Sunday, and flew home on Monday. This was all back in 2015. So this trip is definitely going to be much longer. If you have recommendations, definitely send them to me. I’m starting to bookmark all the places I want to try. So far, crawfish is at the top of our list as well as charbroiled oysters. Soooo excited.
In the mean time, I’m bringing you an everything spice grilled cheese sandwich because everything spice is well, everything. For reals. If you can get your hands on everything but the bagel seasoning, you need to have it on hand for your toasts, for your eggs, for your sandwiches. Basically, everything that needs to be seasoned. You should also invest in truffle salt or truffle butter. Soo worth it.
This grilled cheese sandwich is filled with two types of cheeses: mild cheddar and havarti. But I’ve used fontina, brie, and mozzarella for grilled cheese sandwiches too. So whatever cheese that melts very well will work.
If you’ve had my grilled cheese sandwich before, you’ll know that I favor salt, cheese, and honey together. There’s something about melted cheese seasoned with a little salt and a drizzle of honey that’s absolutely addictive. I can sit there and eat grilled cheese sandwiches all day long and I won’t be tired of it. Sweet and savory with melted cheese? Yesss!

Place shredded havarti cheese on one slice of bread. Choose bread that’s thick and sturdy. Place shredded cheddar cheese on the other slice. Then put the two slices of bread together. Rub butter on the outside of the sandwich. Sprinkle extra shredded cheese and as much of the everything spice seasoning as you like on top and press down to make it stick to the bread.
In medium sized skillet, add butter over low to medium heat. Once the butter has melted, place the sandwiches into the pan. Cook for 3-4 minutes until browned, then flip the sandwiches over, and cook for another 3-4 minutes.
Serve the everything spice grilled cheese sandwich with a generous drizzle of honey.

Everything spice is obviously a US thing. What does it include?

It’s usually a bagel topping. Sesame seeds, poppy seeds, toasted garlic flakes, toasted onion flakes, and coarse salt. Full-on yumminess!

It’s generally a combination of dried minced garlic, dried minced onion, poppy seeds, white sesame seeds, black sesame seeds, and sea salt. It’s great on pretty much everything. But it’s most popular on bagels.
