One last fall treat before Thanksgiving!
I can’t believe that we’re just a couple days away from Thanksgiving. I’ve been going grocery shopping pretty much every day this week. At this point, I think I have everything I need. But I’m going over all my recipes again just in case.

So let’s talk about these pumpkin spice rice crispy treats.
I’m not always a fan of marshmallows. It’s sticky and soft, and the texture is soo not my thing. But! When it’s melted and mixed with rice crispy cereal, I can eat an entire batch.
Of course, with fall quickly coming to an end, I wanted to make a fall inspired dessert. Like these pumpkin spice rice crispy treats. The perfect amount of pumpkin spice so that you have all the warm flavors of fall. But it won’t be overwhelming either.
These rice crispy treats would be perfect to make as a snack as you’re prepping for Thanksgiving.
Line a 9×9 inch baking pan with parchment paper.
In a large pot, melt butter over low heat. Add marshmallow and pumpkin spice. Stir until the marshmallows are completely melted. Constantly stir to prevent the marshmallows from sticking and burning.
Add the rice crispy cereal to the pot, about one cup at a time. Stir to mix the cereal with the marshmallow. Once all the rice crispy cereal is covered in the marshmallow, pour all the cereal marshmallow mixture into the baking pan.
Use a spatula to spread the rice crispy mixture evenly. Let the pumpkin spice rice crispy treats sit for about a half hour until set.
Use a sharp knife to cut the pumpkin spice rice crispy treats into 9 or 16 pieces, depending on how large you like each of the bars.
