It’s almost the weekend again!
I took a few days off for my cousin’s wedding, both from work and from blogging. There was just so much to do. Last minute preparations, wedding ceremony, photos, reception set up, and of course, the clean up. So I had to step away for a few days to enjoy the wedding and to stress over the little things (not so little at the time) that had to do with Linda’s wedding.
But it feels like it’s been forever since I’ve updated you with a brand new recipe. The last few posts were all pre-written. And I’m planning to do it again for next week while I’m away in Pennsylvania . Which, I’m kind of worried about. I’ve been obsessively checking the weather to see what to pack and how to pack and it seems like it’s constantly changing. One moment, it’s sunny or cloudy, the next it’s snowing and raining. Um…. How do I pack winter clothes in a carry on? If you have tips, I would love to hear them!
In the meantime, we have to talk about these croissant melts. I made these croissant melts open faced, but it might be easier to eat, especially on the go, if you made it into a sandwich.
But I absolutely love how tasty these are. Flaky store bought croissants topped with melted cheese, fresh avocado, and honey chipotle marinated shrimp. I’m pretty sure I can eat this for every meal for awhile and not be tired of them. Plus, it takes like 10 minutes of cook time and maybe 5 minutes of prep time to make these croissant melts. It’s perfect for an instant meal, whether it’s lunch or dinner.
In a medium sized bowl, add jumbo shrimp, chipotle peppers, adobo sauce, honey, chile powder, and salt. Mix until all the shrimp are coated in the sauce. Let sit for about 5 minutes.
Add olive oil to a small skillet, then add the marinated shrimp. Cook the shrimp for about 5 minutes or so until they are no longer gray and translucent.
Cut croissants in half. Sprinkle mozzarella cheese on top and heat up in the oven for a few minutes until the cheese has melted and the croissant is crisp on the edges.
Place thinly sliced avocado on the croissant melts. Sprinkle a pinch of salt on each of the croissant halves. Then place the honey chipotle shrimp on top.
Garnish the spicy honey chipotle shrimp avocado croissant melts with shredded parmesan cheese and finely chopped parsley, and serve warm. If you need to pack these for an on the go meal, just turn these croissant melts into sandwiches.

- 1 dozen jumbo shrimp or prawns, deshelled and deveined
- 2 chipotle peppers in adobo sauce, chopped
- 1 tablespoon adobo sauce from the can
- 1 tablespoon honey
- ¼ teaspoon chile pepper
- ⅛ teaspoon salt
- 2 or 4 croissants (open faced or sandwich)
- Shredded mozzarella cheese
- 2 medium sized avocado, thinly sliced
- Shredded parmesan cheese
- Chopped parsley for garnish

This looks really yummy and an interesting idea, thanks for sharing it. I had started my own blog for a hobby/project as well just a few months ago so it isn’t in the stages that yours is developed in, since I just have it as a free plan without the nice plugins haha.
