Happy Sunday!
I hope you’re having a wonderful weekend so far and that wherever you are, you’re staying warm and cozy. It’s been days of cold weather here, and even though we’re just a few weeks away from spring, it definitely does not feel like it. I’ve been bundled up in layers of blankets, knee high boots socks, and blanket scarves. And I’m soooo glad that I didn’t have work this weekend, that way I didn’t have to leave the house.
Have you heard? Someone (Swing Bomb SF) went all around San Francisco on Friday to hang about 50 swings all over the city. I really wanted to brave the cold to go out in search of these swings. but unfortunately, the city workers cut them down pretty quickly. If I hadn’t been working on Friday…. I would have totally gone out to search for them. I love the concept!
This weekend has also been difficult, mostly because Saturday, Feb 24th, marked one year since my grandma suddenly passed away. The one year memorial though won’t be until March 15th. But it’s been difficult to say the least. And none of us can believe that it has already been a year since passed away.
In the mean time, let’s talk about these soft pretzel bites. These pretzel bites are super easy to make, especially since it uses biscuit dough and a few other ingredients. There isn’t much prep time involved or even cook time. So these everything spice soft pretzel bites will be ready to be eaten in absolutely no time at all.
If you’re like me, and you love your carbs, you won’t be able to stop eating these pretzel bites. Each one is chewy and soft and flavorful. Then again, it’s everything but the bagel seasoning. How can you resist that combination of flavor?
Preheat the oven to 425F. Line a large baking sheet with parchment paper and lightly spray with nonstick cooking spray.
Cut each of the biscuit doughs into quarters, and then roll them between your hands into balls. They don’t have to be perfect.
In a medium sized pot, add water and baking soda, and bring them to a boil. Reduce the heat until the water is just simmering. Add the rolled biscuit dough into the simmering water and cook them for a minute. Remove the biscuit dough with a slotted spoon and transfer them over to the baking sheet. Make sure that none of the balls of dough are touching each other.
In a small bowl, mix together egg and a tablespoon of milk. Use a brush to brush this egg wash over each of the pretzel balls. This will help the pretzel brown.
Sprinkle a generous amount of everything but the bagel seasoning over each of the pretzels. Then a sprinkle of salt on top of each.
Bake these everything spice soft pretzel bites in the oven for 15-20 minutes until the pretzel bites have turned golden brown.
Allow the everything spice soft pretzel bites to cool for several minutes before serving.
