We’re baking cookies so the house smells like vanilla and brown sugar. What I really need to get on top of though is the gifts. I have a holiday dinner with my co workers on Friday, and I still have to finish buying gifts for our little game of white elephant. And of course, there’s still so many presents to wrap up. As much as I love the holiday season, it gets kind of expensive with all the gifts I have to buy. Are you done with your Christmas shopping?
Today, I wanted to share with you these candy cane caramel stuffed cookie butter cookies. I know. It’s a mouthful to say. But it’s seriously soo good. Marich Chocolates and I have teamed up again to create a recipe perfect for the holidays. And of course, to celebrate the holidays, we’re hosting a giveaway! But first, these cookies. Cookies filled with cookie butter. For reals. Cookie butter cookies! So you know these have to be good. It’s also an indulgence. But who cares, right? It’s the holidays! All the healthy eating can wait until 2018.
These cookies are easy to make. Plus, I stuffed them with candy cane caramels that Marich Chocolates sent me to try. But if you don’t have candy cane caramels, you always use chocolate chips in your cookies instead. I love these candy cane caramels though. A white chocolate outershell with a peppermint flavored caramel on the inside. It’s more than a little addictive.
To make these cookies, you’ll just several ingredients.
Preheat the oven to 350F. Line a baking sheet with parchment paper or silcone mat. Set aside for now.
In a small bowl, whisk all purpose flour and baking soda together. Set aside for now.
In a medium size bowl, beat together unsalted butter, brown sugar, and granulated sugar until creamy and smooth. Next, add an egg and vanilla extract, and beat until combined. Then mix in the cookie butter until combined.
Add the dry ingredients to the wet ingredients and mix until well combined. Then fold in the candy cane caramels.
Refrigerate the cookie dough for about half an hour or more. When the butter is too soft, it will spread on the baking sheet.
Roll about a tablespoon of the cookie dough into balls and place them on the baking sheet. About 8-9 cookie dough balls. If you like, you can press candy cane caramels into the cookie dough so that they appear on top. Bake for about 10 minutes until the edges are browned. Allow the cookies to cool for several minutes before transferring to a wire rack to completely cool. Repeeat with a second batch of cookies.
Serve these candy cane caramel cookie butter cookies warm.
