Let’s talk about this honey strawberry brie bites!
Just a little over a week ago, I was in the Monterey Carmel area visiting my friend Kim from Sweet Kimplicity. I’ll share photos of my trip soon. But a couple highlights from the trip: strawberry picking and cheese tasting.
Kim and I went strawberry picking at Gizdich Ranch, which is also known for their various fruit pies. If you ever go, you seriously need to try their pies. I’ve had their ollalieberry pie, their dutch apple pie, their boysenberry pie, their cherry pie, and their strawberry rhubarb pie. So soo good.
It was my first time at the ranch, and my first time strawberry picking, and now I really wish that I lived closer to the ranch. How amazing would it be if I get to pick fresh strawberries all the time? Not only do the strawberries taste soo much sweeter, there’s something about actually doing the work yourself that’s so much more fun and satisfying. Plus, when you pick the strawberries yourself, every single strawberry is perfect. It’s not likely to be bruised or moldy like if you get the baskets from the supermarket, or even sometimes at the farmer’s market since you can’t see the bottom.

While we were in Carmel-by-the-Sea, my friend and I visited a popular cheese shop called The Cheese Shop. Easy enough name to remember, right? Lol. The store had soo many different types of cheeses with fancy names imported from all over the world, bottles of wine to accompany the cheese, and of course, tons of crackers to pick from.
I know almost nothing about cheese. So when someone asks me what kinds of cheeses I like, or what I would like to try, I am stumped. I stand there, lost. I mean, how do you know where to start? We ended up asking the girl behind the counter what her favorite cheeses were so that we could start with those.
And of course, Kim and I ended up buying a little of everything we tried!
So in today’s recipe, which honestly, isn’t really a recipe, you get to see how I use some of the items I bought while I was away.
I love the taste of honey on both strawberries and brie. So when all three are served together on crackers, it’s the best snack ever. You can add as much or as little of each ingredient as you would like, it’s up to you. But I like an extra drizzle of honey on mine!
Spread brie on your favorite crackers, top with sliced or chopped strawberries, then drizzle with honey.
