I didn’t really do much for the 4th of July, but I had such an eventful weekend filled with strawberry picking, pie filling sampling, apple cider tasting, and clam chowder sampling. I did so much in two days that it almost feel as if I’ve been vacationing for a week rather than just one weekend. And I’m so glad that I had a few extra days off after my trip to the Monterey area to recover from all the eating that I did before going back to work again.
But I already feel vacation withdrawal. Don’t you just hate that? I think I’m going to need to plan mini trips here and there so that I have something to look forward to every few months.
In the mean time, I want to share with you a drink that just says summer in a glass.
This pineapple rosé summer cocktail is the perfect drink for the summer! And guess what? It only takes two ingredients. Well, three if you count the crushed ice. And four, if you want to count the garnish. But I love that this drink is simple yet tastes like so much more. Grab your bottle of rosé wine and pineapple juice and start mixing.
In a medium to large jar or water bottle, pour pinapple juice and rosé wine together. This recipe makes a small batch, but you can easily double or triple the amount.
Serve the pineapple rosé summer cocktail cold in mason jars or glasses. Top with crushed ice and garnish with flowers or mint.
For the pineapple juice and rosé wine ratio, you can add more juice or more wine accordingly. I like my cocktails with more juice than alcohol so I generally have more juice in mine.

- 1 cup pineapple juice
- ½ - 1 cup rosé wine
- crushed ice
- mint or flowers for garnish
