And I totally think we deserve a pick me up to get us through the rest of the week, don’t you?
I’ve had almost a week off for spring break so I’ve been mostly cooking, testing recipes, running errands, and reorganizing the house. Now that spring break is over, it is definitely a lot more difficult to get myself out of the house and off to work. I seriously need something amazing to get me through the rest of the week.
These mocha chocolate chip cookie bars will be perfect for that!
What I love most about these cookie bars is that they’re simple to make. I don’t have to worry about the cookies falling apart and becoming flat. I don’t have to worry that the cookies aren’t the right shape. All I have to do is make the cookie dough and spread them in a baking pan. Super easy.
Each cookie bar is chewy and soft with a hint of mocha. It’s the perfect dessert.
I think from now on when I have to make snacks or desserts for guests, I’m making cookie bars. <3
Preheat the oven to 350F. Lightly grease a 13×9 inch baking pan with nonstick cooking spray. Set aside for now.
In a large mixing bowl, mix all purpose flour, baking powder, salt, and espresso powder until well combined. Set aside for now.
In a medium mixing bowl, cream together butter, brown sugar, granulated sugar, a large egg + yolk, and vanilla extract until smooth.
Pour the wet ingredient into the dry ingredient, and mix until combined.
Fold the chocolate chips into the cookie dough, but reserve some chocolate chips to sprinkle on top later.
Spread the mocha chocolate chip cookie dough evenly in the prepared baking pan. Sprinkle the reserved chocolate chips on top.
Bake in the oven for 23-25 minutes. Remove the baking pan from the oven. Insert a toothpick into the cookie. If the toothpick comes out clean, the cookie is done. Allow the mocha chocolate chip cookie to cool down for several minutes before cutting into it. If you cut into the cookie right out of the oven, the bars will crumble.
Slice the mocha chocolate chip cookie into 20-24 bars.
Serve the mocha chocolate chip cookie bars warm and with a scoop of ice cream if desired.

Would it work to make in a 9″ square pan so the bars are thicker? Thanks!

It should work, but you may have to bake a little longer. Use a toothpick to test the cookie bars to make sure that they are done. Let me know how it turns out =)

I NEED to try these! But I don’t have a clue where to get espresso powder. I never drink espresso. I always drink regular coffee from my drip coffee maker. Any suggestions about where to buy the powder?

You can use instant coffee crystals like folgers or starbucks. Starbucks are already in powder form but more expensive. Folgers can either be ground to powder in your coffee grinder/food processor or moistened with one of the wet ingredients before adding to the recipe.
