Shrimp with pineapple chunks, sliced onions, diced jalapenos, and chopped green bell peppers in a sweet and sour sauce, then served with a multigrain medley. This sweet and sour shrimp is the perfect dish to serve for Chinese New Year.
This upcoming week is a super busy one. Have you noticed that the Superbowl, Chinese New Year, and Valentine’s Day pretty much fall in the same week? Which one are you most excited for?
My family celebrates Chinese New Year. It is a huge deal in our house. The cleaning, the cooking, the sweets, the flowers, the red envelopes. We do it allllll. The more, the better. I think the idea is overabundance. You want to have a lot of everything so you don’t lack anything in the upcoming year. At least, that’s how I was taught. But every family has their own traditions.
My own family traditions involve food. Lots and lots of food. We pile on the fruits, the candies, the dried fruits, the vegetarian dishes, the meats. Like, everything. And we eat for days. Because I think in Asia, Chinese New Year means days of celebrations. I will show you pictures of the food we eat sometime next week. =)
One of our favorite dishes is sweet and sour shrimp.
How can you resist the sweet tanginess of the pineapples? Or the classic flavor of sweet and sour sauce?
It’s a super simple dish to make, and so totally customizable. You can definitely add your favorite ingredients. Raid your fridge and find your leftover ingredients and make this dish.
But here are a few ingredients you can’t leave out.
Shrimp or prawns. Obviously, right? lol. Just kidding. You can substitute with your favorite meat or even tofu if you like.
Pineapple chunks. Dole Pineapple Chunks are sweet and tangy and work so well in so many different dishes. And how can you have a sweet and sour dish without pineapples?
The sweet and sour sauce. I used Kikkoman’s Sweet and Sour Sauce to make my life so much easier. With this sauce, I can make dish so much faster with no fuss.
And of course, rice to serve with. You can serve your sweet and sour shrimp with white rice, brown rice, or even Minute® Multi-Grain Medley, which is a blend of long grain brown rice, Thai red rice, wild rice, and quinoa. All of which are gluten free and can conveniently be cooked in just 10 minutes.
All of these ingredients can be found at your local Safeway.
First, add olive oil to a medium sized pan over medium heat.
Once the olive oil has heated for about a minute, add onions, green peppers, and jalapenos to the pan. Stir the ingredients around using a spatula to cook them evenly. Cook the ingredients until they have softened.
Add the shrimp and the pineapples to the pan. Cook the shrimp until they’ve turned a reddish orange color.
Pour in the sweet and sour sauce and the soy sauce.
Stir to coat all the ingredients with the sauce. Remove the pan from heat.
In a separate pot, add one package of the Minute® rice and one cup of water. Allow the water to come to a boil, then turn the heat down to a simmer and cover. Cook the rice for 10 minutes.
Serve the sweet and sour shrimp with the rice.
See? Super easy to make. And now you have a dish to serve for a weeknight dinner, or for Chinese New Year!
