Mashed avocadoes loaded with shredded chicken, corn, and diced tomatoes with green chiles. Delicious with a hint of garlic, this loaded chicken guacamole is perfect with Townhouse crackers for small gatherings.
Three days till Christmas which means it’s time to find #WaystoWow your guests.
What will you be doing over the holidays?
I’m usually entertaining family over the holidays and since we love to snack, I thought I’d create a dip that’s just perfect for that! After all, we’ll need something to munch on while we’re watching Christmas movies and wait for dinner.
Any dip with mashed avocado is a favorite of mine. I’m addicted to the rich creaminess of avocado. Mixed with shredded chicken, corn, and diced tomatoes with green chiles, this guacamole is both healthy and delicious. If you prefer bacon, you can definitely replace the shredded chicken with bacon bits.
I chose to use shredded chicken as a healthy alternative, to offset all the holiday eating I’ve been doing, both with family and at work. Cheesecake? Yes. Pizza? Check. Cookies? All types. Chocolate? Of course!
This loaded chicken guacamole is the perfect dip with Townhouse crackers from Target. You can find Townhouse products in the crackers aisle.
The light, buttery, crispy crackers are so amazing by themselves, but with this dip, you won’t be able to resist taking the next bite.
This recipe is soo easy to make and requires just about 15-20 minutes to make. Crackers and guacamole dip and you have the perfect appetizer and snack for your guests during the holidays!
In a medium sized skillet, add the diced tomatoes with green chiles, cubed mozzarella cheese, corn, garlic powder, and salt, and stir until the ingredients are evenly incorporated. I know the measurements for the garlic powder is a little odd, but I think garlic powder can be strong sometimes. 1/8 teaspoon of garlic powder per avocado allows you to taste the garlic but doesn’t overwhelm the dip.
Cook over low to medium heat until the mozzarella cheese has completely melted.
Slice the avocadoes in half and remove the pits. Use a spoon to carve the avocadoes from its outer shell. Place the avocado into a large bowl and mash them until the consistency is to your liking.
Add the tomato mixture to the mashed avocadoes, then add the shredded chicken. Combine the ingredients until they are well incorporated.
Serve the Loaded Chicken Guacamole with Townhouse Crackers.

- 3 large avocados, pits removed
- 1 cup cooked chicken, shredded
- 1 can of diced tomatoes with green chiles
- ½ cup frozen corn, thawed
- ¼ + ⅛ teaspoon garlic powder
- ¾ teaspoon salt
- ½ cup cubed mozzarella cheese
- A box of Townhouse crackers
- First, drain the diced tomatoes with green chiles to remove the excess water.
- In a medium sized skillet, add the diced tomatoes with green chiles, corn, cubed mozzarella cheese, garlic powder, and salt, and stir to evenly incorporate the ingredients. Cook until the mozzarella cheese has completely melted. Set aside for now.
- Slice the avocadoes in half and remove the pits. Use a spoon to carve the avocadoes from its outer shell. Place the avocado into a large bowl and mash them until the consistency is to your liking.
- Add the tomato mixture to the mashed avocadoes, then add the shredded chicken. Combine the ingredients until they are well incorporated.
- Serve the Loaded Chicken Guacamole with Townhouse Crackers.
For a vegan version, you can leave out the chicken and the cheese.
For a gluten free version, you can use gluten-free crackers.
