The last week has been so difficult.
I worked most of the week to keep myself busy, but I felt as if I was distracted and elsewhere, not completely focused on what I was doing.
On my day off, I decided to stop at a local coffee shop for some inspiration. I feel like I needed to constantly do things in order to not feel so sad, to not wonder the what ifs. But at the same time, it feels like the whole world continues to move as if nothing has happened and yet my entire world has changed.
I went to a small coffee shop called Rise and Grind, and they had the most amazing avocado toast. The avocado spread was garlicky and topped with a soft boiled egg with crushed red pepper flakes. I mean, seriously, I can eat this for days. And trust me, I have plans to make this at home and sharing them with you. The creme brulee latte was amazing, especially if you’re a coffee lover. That crispy sugary top was my favorite part.
I missed so much while I was away from the Internet world this week. So here’s what I found.
In this week’s finds…
Sky High Chocolate Mousse Pie. Yes, please.
One Bowl 8 Ingredient Irish Coffee Fudge Brownies. Omg!
Huevos Rancheros Scrambled Eggs sound like an amazing breakfast.
I could eat this chicken shawarma and sweet potato fry bowl every night.
This lemon almond pudding cake. <3
This grapefruit mint chia refresher looks absolutely perfect for spring.
If you’re looking for a quick and easy breakfast, this vanilla ricotta banana toast with pistachios sounds perfect.
I’ve always wanted to make bread, but I was afraid that there’s going to be too much leftover and they’ll all go to waste. This small batch foccacia bread is perfect for your bread cravings.
Avocado on toast with an egg? Was the yoke runny? I can’t decide whether I like the sound of it or not.
Hope you feel better soon!
Yes, the yolk was runny =)
It seems like a really odd combination to me, avocado on toast I can get, but the egg… it does look scrummy though.
appetizing. lemon pudding. mmmmm
Looks like my perfect breakfast!
Aw, Andrea, I’m sorry that you had a rough week. But as much as you have had a rough week, by that much you’ve grown into a stronger and more resilient person. And of course, great tasting food doesn’t hurt! Avocado toasts are seriously one of my favorite meals – I could have it every day for three meals each day, haha. I’m going to try putting an egg on top of mind – I’ve never thought of putting the two and two together! I usually sprinkle chia seeds or place smoked salmon on minds to get in that extra tasty kick. Thanks for the inspiration! Hope next week serves you well! xoxo,Stephanie
Thanks, Stephanie!
Hang in there! Bread (sliced) freezes well and you can toast it straight from the freezer. The NYT even had an article that said toast from the freezer was better, although I’m not entirely convinced. (My toaster has a special setting for frozen toast.)
Thanks for the tip! I have never frozen bread before, mostly because we never have space! But I’ll have to try it out!
I love avocado toast. Never thought of topping with a hard-boiled egg. I know you said soft-boiled, but it looks like what I call hard-boiled. Is that the same thing?
Hard boiled egg is when the yolk is completely cooked through. Soft boiled egg is when the outside is cooked and the yolk on the inside is still runny. Hope that helps, Gail!
Thanks, Andrea. I guess I’m a hard-boiled kind of girl.
what a wonderful family you have and how eloquently you express yourself. take care – my sympathies
Thank you so much, Claire!
