Fig Caprese Flatbread

Flatbread topped with melted mozzarella, fresh figs, cherry tomatoes, basil, mixed greens, roasted walnuts, and a drizzle of honey. This fig caprese flatbread is delicious and perfect as a meal or an appetizer to share with others.
Ingredients
Flatbread
  • 1 ½ cups + 3 tablespoons all purpose flour
  • 1 tablespoon cornmeal
  • 1 teaspoon baking powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ⅓ cup olive oil
  • ½ cup water
Toppings
  • 8 ounces fresh mozzarella cheese
  • 1 fig, sliced into 6
  • ½ cup quartered cherry tomatoes
  • 4-5 basil leaves, cut
  • Mixed greens, roughly chopped
  • 1 ½ tablespoons chopped walnuts
  • Drizzle of honey
  • Pinch of salt to taste if desired
Directions:
  1. Preheat the oven to 400F.
  2. In a medium mixing bowl, combine flour, cornmeal, baking powder, Italian seasoning, garlic powder, and salt. Add olive oil and water and mix until a dough forms.
  3. Roll the dough into a ball and knead it a few times on a floured surface before flattening the dough, about a ¼ inch thick.
  4. Bake the flatbread on a baking sheet for about 10-12 minutes until the bread starts to appear golden.
  5. Remove the flatbread from the oven. Top it with sliced mozzarella cheese, and return it to the oven for another 10 minutes until the cheese has melted.
  6. Now, add fresh figs, halved cherry tomatoes, torn basil, and mixed greens. Drizzle with honey and top with roasted walnuts. Lightly season with a pinch of salt to taste, if desired.
  7. Let the flatbread cool for a few minutes before cutting into them.
  8. Serve the fig caprese flatbread warm.
