Tomato Basil Pastries

Puff pastries filled with fresh tomato and basil and melted cheese. These tomato basil pastries are delicious and the best way to start your morning.
Ingredients
  • 1 puff pastry sheet, thawed
  • ½ cup shredded mozzarella cheese
  • 1 medium sized tomato, sliced
  • 3-5 large basil leaves, torn, more if desired
  • 1 large egg , beaten
  • Pinch of salt
Directions:
  1. Preheat the oven to 400F. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Once the puff pastry sheet has thawed, cut it into 4 even pieces.
  3. Sprinkle about 2 tablespoons of mozzarella cheese down the center diagonally of each puff pastry square.
  4. Top the cheese with slices of tomato and torn basil leaves.
  5. Fold opposite corners of the puff pastry squares to the center.
  6. Brush the beaten egg on the puff pastries to allow pastries to turn golden brown.
  7. Sprinkle salt on top if desired.
  8. Bake the pastries in the oven for 10-13 minutes until the pastries are golden brown and the cheese has melted.
  9. Serve the tomato basil pastries warm.
