Pumpkin Oatmeal with Dried Cranberries and Toasted Walnuts

Old fashioned oats cooked in almond milk with a little bit of brown sugar and pumpkin puree. Topped with toasted walnuts and dried cranberries, this delicious healthy pumpkin oatmeal is perfect for breakfast after an evening of festivities.
Ingredients
  • ½ cup old fashioned oats
  • ½ cup water
  • ¼ cup almond milk
  • 1 - 1½ tablespoon brown sugar
  • 1 tablespoon pumpkin puree
  • ¼ teaspoon pumpkin pie spice
  • 1 tablespoon dried cranberries
  • 1 tablespoon toasted walnuts, chopped
Directions:
  1. Add old fashioned oats and water into a small pot over medium to high heat. Allow the oats to cook for about 5 minutes.
  2. Add the almond milk, brown sugar, pumpkin puree, and pumpkin pie spice to the oatmeal, and stir to incorporate all the ingredients.
  3. Allow the ingredients to simmer together for about 10 minutes until the oatmeal is soft and creamy.
  4. Serve the oatmeal topped with dried cranberries and toasted walnuts.
Notes
Add brown sugar to taste. If you prefer your oatmeal less sweet, add less brown sugar.
