Korean Style Corn Cheese

Sweet corn and red bell pepper tossed in mayonnaise and butter with a pinch of salt then topped with mozzarella cheese. This Korean Style Corn Cheese is simple, delicious, and a great side for any dish.
  • 3 cups canned corn or fresh corn
  • ½ cup diced red bell pepper
  • ⅛ cup butter
  • 4 tablespoons mayonnaise
  • 1 tablespoon granulated sugar
  • Salt and pepper, to taste
  • 1 ½ cups shredded mozzarella cheese
  1. Preheat the oven to 350F.
  2. In a cast iron skillet, add corn, butter, mayonnaise, sugar, diced bell pepper, and chopped scallions. Cook over low to medium heat until all the ingredients have combined. Lightly season with salt and pepper and mix until combined.
  3. Top the corn with shredded mozzarella cheese.
  4. Bake the corn cheese in the oven for several minutes until the cheese has melted and browned.
  5. Serve this Korean style corn cheese warm topped with chopped scallions.
