Soft and moist cake-like banana bread filled with macadamia nut. This banana macadamia nut bread is simple, delicious, and the kind of treat you want to start your day with.
Ingredients
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ cup unsalted butter, room temperature
  • ½ cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 3 large bananas, mashed
  • ½ cup plain Greek yogurt
  • 1 cup macadamia nut, chopped
Directions:
  1. Preheat the oven to 350F. Lightly grease a 9x5 inch loaf pan with nonstick cooking spray or olive oil. Set aside for now.
  2. In a small bowl, whisk together flour, and baking soda until combined. Set aside for now.
  3. In a medium sized bowl, beat together butter, granulated sugar, and brown sugar until light and fluffy. Next, beat in eggs and vanilla extract. Then add mashed bananas and Greek yogurt, and beat until well combined.
  4. Add the dry ingredients to the wet ingredients. And mix until just combined.
  5. Fold the macadamia nuts into the batter.
  6. Pour the banana bread batter into the prepared loaf pan. Bake the banana macadamia nut bread for 45-55 minutes until the edges and top turn lightly browned. Insert a toothpick into the center of the banana bread. If the toothpick comes out clean, the banana bread is done. If not, bake for a few more minutes. Different ovens vary in temperature.
  7. Allow the banana macadamia nut bread to cool for 10 minutes before slicing. Otherwise, the banana bread may fall apart.
  8. Serve the banana macadamia nut bread warm.
