Watermelon Gimlet

A summery cocktail composed of frozen watermelon puree, simple syrup, gin, and lime juice then topped with crushed ice and perilla leaves. This watermelon gimlet embodies the flavor of summer and is so refreshing.
Ingredients
  • 1 oz gin
  • 1 oz lime juice
  • 1 oz simple syrup
  • Crushed ice
  • 1-2 cups frozen cubed watermelon
  • Perilla leaves or mint leaves for garnish
Directions:
  1. In a blender or food processor, blend or pulse about a cup or two of frozen cubed watermelon until smooth. You want about a third cup of frozen watermelon puree.
  2. In a medium sized glass or a cocktail shaker, add gin, lime juice, simple syrup, and crushed ice. Shake or stir until all the ingredients are incorporated. Pour the drink into a small serving glass or a mason jar. Top with more crushed ice. Then pour the icy cold watermelon puree over the ice.
  3. Garnish the watermelon gimlet with mint leaves or perilla leaves.
  4. Serve the watermelon gimlet cold.
