Vietnamese Shredded Chicken Salad

Shredded chicken tossed with torn mint, red onions, and fried shallots. This Vietnamese shredded chicken salad is simple, delicious, and perfect as an appetizer or a light meal.
Ingredients
  • 3 cups shredded cooked chicken
  • ½ medium red onion, sliced thinly
  • 4 sprigs of mint leaves, roughly torn
  • Juice of 1½ limes
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon fried shallots
  • 1 red chili pepper, sliced (optional)
Directions:
  1. In a large bowl, add shredded chicken, thinly sliced red onions, and freshly torn mint leaves. Squeeze fresh lime juice over the salad. Add granulated sugar and salt. Mix until all the ingredients are well incorporated.
  2. Top with more freshly torn mint leaves and finish with a generous amount of fried shallots. Add sliced red chili pepper if desired.
  3. Serve the Vietnamese shredded chicken salad as a light meal or a side.
